"Chitosan" means shell or armor and is a naturally occurring cationic biopolymer (polyaminosaccharide or polyglucosamine) obtained from chitin. It can be sourced not only from shellfish but also from fungi, making it an attractive option for individuals with shellfish allergies or for use in vegan products. Chitosan is used in water treatment, wastewater purification, the food industry (e.g., beverages and dietary supplements), and cosmetics (e.g., shampoos, hair gels, and skincare products). It has the ability to bind substances (e.g., suspended solids or dietary fats), precipitate them, and form films. Chitosan is non-toxic, provides preventive protection against bacteria, viruses, and other contaminants, and can be effectively used to promote wound healing.
