Hemoglobin is the iron-containing protein complex that serves as the blood pigment in the red blood cells of vertebrates and binds oxygen. We extract hemoglobin from porcine blood. It is used, among other things, as a "food grade" coloring agent in sausages or in the tobacco industry.
